FOR THE SENSITIVE PALATE
Catering
We start from scratch. Niclas Robertsson was 28
years when he moved to New York and took a job with Paavo Turtiainen. Back then,
Paavo was the butler and personal chef to Ingrid Bergman and Lasse Schmidt in
Manhattan. One of Niclas’ first jobs was to organize a cocktail party for the
famous Swedish actress and director.
Over the years there would be many jobs
for various celebrities, embassies and companies before Niclas returned to
Halmstad and took over the Pio Pio on Main Street, together with some colleagues.
Once home, he took up the American art of arranging catering and cocktail
parties.
”In the US, we would
arrive at a completely empty building in the morning - ten
hours later, we had installed tents, plants, furniture, stages, stands, rugs,
porcelain and, of course, a small kitchen that could
handle up to 800 people.”
Back home in Sweden, Niclas continued the catering business and developed it into one of his signatures. In the picture to the right, you can see the Swedish, King Carl XVI Gustaf, enjoying the food during a STCC event in Knutstorp.
The dessert table includes one of Niclas’ favorites - Mamma Ine’s rhubarb pie.
